A savory and tangy Tom Yum Fried Rice made with day-old rice, shrimp, chicken, and a blend of spices including Tom Yum paste and cayenne pepper. The dish is sautéed with vegetables and garnished with lime for an added zesty flavor.
Heat a pan or wok with some butter, scramble eggs, and set aside.
Marinate chicken with crushed black and white pepper, salt, and fry in the same pan with some more oil until golden brown, then set aside.
In the same pan, heat both oil and butter, then add chopped garlic, Thai red chilies, sliced onions, and the white ends of scallions.
Add Tom Yum paste along with cleaned and deveined shrimp. Cook until shrimp is tender.
Add the day-old rice along with soya sauce and fish sauce.
Add back the fried boneless chicken, scrambled eggs, halved cherry tomatoes, scallions, and cayenne pepper.
Squeeze lime or lemon on top, give it a good mix, and enjoy!
