Boot er halwa is a rich and creamy dessert made from soaked chana dal and flavored with cardamom and cinnamon, cooked in milk and garnished with nuts. This delightful sweet dish is perfect for festive occasions.
Soak the chana dal in water for 5–6 hours or overnight.
In a pot, add the milk and soaked chana dal, and bring it to a boil with cinnamon.
Once the dal has softened, transfer it to a blender and blend until smooth.
In a pan, heat the ghee. Add the blended chana dal and stir for 5–6 minutes until the ghee is fully incorporated and the mixture smells toasty.
Add the cardamom powder and sugar or condensed milk, and keep stirring until the halwa looks glossy.
Transfer the halwa to a flat plate or container and flatten it using a spoon or your hand.
Garnish and let it set in the fridge for 2 hours.
Once cooled, cut into diamond or square shapes.
In a separate pan, heat ghee for garnish.
Add chopped nuts, coconut, and sugar. Cook for 1–2 minutes, or until everything looks toasty and lightly golden.
Garnish the halwa with the nut mixture and optionally add silver leaf.
