A flavorful Bangladeshi Ruhu Fish Curry (or Jhol) made with marinated Ruhu fish, spices, and vegetables. The dish features a rich gravy that's perfect with rice and is enhanced with fresh herbs like cilantro and green chilies.
Marinate the fish pieces with salt and turmeric, then shallow fry them until slightly golden and browned on each side.
In the same pan, add oil, onions, and ginger. Fry until the raw smell goes away.
Add all the ground spices, tomato purée, and cook until the oil separates.
Add the veggies and cook for a few minutes without water. Then add enough water to slightly cover the vegetables.
Cover and cook until the vegetables are tender.
Once cooked, add the fish back in, along with chopped tomatoes. Sprinkle some roasted cumin powder on top and cook until the tomatoes soften.
Turn off the heat, top with green chilies and cilantro. Cover and let it sit for 5–10 minutes to allow the flavors to blend.
