Soak cashews and whole dried red chilies in water (remove the seeds first).
Dry roast the whole spices and grind them into a powder.
Marinate the prawns with the ground spices, then fry in ghee until they turn red. Set aside.
Blend the soaked cashews, dried red chilies, onion, and garlic into a paste.
In the same pan, heat a little more ghee and add the blended paste.
Stir in the whole spices, jaggery, and salt.
Cover and cook until the oil separates and the gravy turns a deep brownish red.
Add the fried shrimp back in (optionally add curry leaves here).
Cover and cook on low heat for 10–15 minutes.
Garnish with cilantro and a squeeze of lime. Serve with rice or roti.
