A delicious meat curry made with tender mutton or beef, infused with various spices and topped with a flavorful tadka. The dish combines whole and powdered spices for a rich taste, served with rice or paratha.
Cook whole spices with oil over medium heat for 3-4 minutes, then add ginger-garlic paste.
Fry for a few minutes, then add sliced onion. Cook until it’s translucent and golden brown.
Add powdered spices. To ensure they’re well-cooked, add a small amount of water (about 1/4 cup) and continue cooking until the spices are done.
Reduce the heat, cover the pot, and cook until the oil separates.
Add the meat and cook over medium heat for 2-3 minutes. Then lower the heat, cover the pot, and continue cooking until the meat is tender. If it starts to dry out, you can add 1/2 cup of boiling water.
In a separate pan, prepare the tadka. Heat ghee, sauté garlic for a minute, and add chopped onion. Cook until it’s golden brown.
Pour the tadka over the cooked meat and serve with rice or paratha.
