Doi Bhindi, also known as Okra, is a flavorful dish featuring okra cooked with yogurt and a blend of spices. It is a popular Bengali recipe that combines the goodness of tender okra with aromatic spices and yogurt to create a delectable gravy.
Wash and cut the okra, trimming the front and end tips.
In a pan, heat oil and add okra, salt, turmeric, and red chili powder.
Cook for a few minutes, then set aside.
In the same pan, heat a little more oil.
Add cumin seeds, green chilies, chopped ginger, garlic, and onion.
 Cook until onions turn translucent.
For the yogurt mix, combine all ground spices and add to the pan.
Cook over low heat, stirring constantly so the yogurt doesn’t separate.
Gradually add about 1/3 cup of water (or as needed) to the yogurt and spices.
 Cook until the oil separates.
Add the fried okra back in and cook for another minute.
Turn off the heat and sprinkle with chaat masala and cilantro.
 Enjoy!
