A fluffy and fragrant citrus cake featuring Sumo Citrus, perfect for spring tea parties. The cake is infused with warm spices and topped with a simple syrup glaze for added moisture and flavor.
Prepare the citrus base first by simmering Sumo Citrus in 4 cups of water for about 30–40 minutes until soft and most water is absorbed.
Cool then blend into a smooth purée. Let this cool before adding to your batter.
Preheat the oven to 350°F (175°C) and grease a cake tin.
In a bowl, whisk together the dry ingredients: plain flour, ground cinnamon, ground ginger, cardamom powder, baking powder, and baking soda.
In a large mixing bowl, whisk together the wet ingredients: eggs, sweetened condensed milk, Olive Oil, vanilla essence, and cooled Sumo Citrus purée until smooth and well combined.
Add the dry mixture into the wet mixture in two parts and gently fold until just combined, do not overmix.
Pour the batter into the prepared pan and bake for 45-50 minutes, or until a skewer comes out clean.
For the glaze, bring sugar and water to a simmer over medium heat, stirring until the sugar is fully dissolved.
Remove from heat and stir in orange blossom water. Let it cool slightly before brushing over the cake.
Top the cake with shredded coconut and enjoy with warm Sumo Citrus Tea.
