Chicken Bhuna is a flavorful dish made by marinating chicken with spices and then cooking it with onions, tomatoes, and a blend of spices for a rich and aromatic curry.
Marinate the chicken with salt, ghee, red chilli powder, turmeric powder, cumin powder, coriander powder, yogurt or lemon juice, ginger paste, and garlic paste.
 Cut 3 medium red onions.
Dry roast the spices (coriander seeds, black pepper, cloves, black cardamom, shahi jeera, and salt) for 2-3 minutes and grind them into a fine powder.
In a pan, add ghee, bay leaf, cloves, and peppercorns.
Fry the chicken on high heat for 2-3 minutes or until golden brown. (You can skip this step and fry the onions first.)
Remove the chicken from the pot.
In the same pan, add oil and fry onions until golden brown. (You can add chicken at this point as well.)
Add back the chicken until fully cooked.
Once the liquid has reduced, add fresh tomatoes and green chilies and cook until the tomatoes are cooked.
Serve with warm rice and enjoy!
