A delicious mix of cauliflower and potatoes stir-fried with spices like panch phoron, turmeric, and red chili powder. Cooked with ginger garlic paste and garnished with coriander, this vegetarian dish pairs perfectly with chapati, paratha, or rice.
Fry chopped potatoes and cauliflower with oil until golden brown, then set them aside.
In the same pan, add 1-2 tbsp of oil, panch phoron, and bay leaf. When the spices start to splatter, add chopped onion.
Cook for 2-3 minutes over high heat, then add ginger garlic paste.
Include all the powdered spices along with salt, except cumin. Add 2-3 tbsp of water to prevent the spices from burning.
 Cook until the rawness disappears.
Add back the fried vegetables, tomatoes and 1/4 cup of water. Cover the pot and let it cook for another 15 minutes.
Top them with dry roasted cumin powder, and add a generous bagar or tadka as shown in the video.
 Garnish with coriander and enjoy!
