Carrot Halwa is a decadent dessert made from grated carrots cooked with milk, sugar, and flavored with saffron and cardamom. This rich dish is further enhanced with ghee and garnished with nuts and mawa, making it a delightful sweet treat.
Add milk, cardamom, saffron, and grated carrots to a pot. Bring it to a boil, then lower the heat and simmer for 1 hour or until the milk has completely absorbed into the carrots.
If using a pressure cooker, cook until soft, then transfer to a pan to continue the process.
Add ghee and sugar, then cook and stir occasionally until well combined.
In a separate pan, add 2 teaspoons of ghee and sliced nuts, cooking until fragrant.
Toss the nuts and raisins into the carrot halwa and cook for another 15 minutes.
For quick mawa, mix milk powder with ghee until well combined.
Garnish the halwa with chopped nuts and mawa before serving.
