A flavorful Beef Alu Jhol made with tender beef, cubed potatoes, and a blend of whole and ground spices, simmered to perfection. Serve hot with rice for a hearty meal.
Heat oil in a pot and temper whole spices until fragrant.
Add chopped onion and salt. Fry for a few minutes, then add ginger and garlic paste.
Add ground spices with about 1/4 cup water to prevent burning. Cook for 2–3 minutes.
Add the meat and stir-fry uncovered for a couple of minutes, then cover. Cook over low to medium.
After 15 minutes, the meat will release water. Gradually add more water as needed to cook the meat. Cover and cook, checking occasionally.
When the meat is 80-90% cooked, add the potatoes with some more water.
Total water used should be 4.5 cups — 2.5 cups for cooking the meat, and the remaining for the potatoes and gravy.
 Sprinkle green chilies and cilantro.
 Serve hot with rice.
